Serving Size: 2 tacos

Ingredients:

  • 8 organic corn tortillas
  • 1 cup cooked organic chickpeas, rinsed and drained
  • 1 small cucumber, diced
  • 1/4 cup plain unsweetened coconut yogurt
  • 1/4 cup chopped fresh cilantro
  • 1 lime, juiced
  • 1 tbsp extra-virgin olive oil
  • Salt and pepper to taste

Directions: In a bowl, mix diced cucumber, coconut yogurt, cilantro, lime juice, salt, and pepper to make the raita. Warm chickpeas in a skillet over medium heat with olive oil, salt, and pepper. Warm tortillas, fill with chickpeas, and top with cucumber raita.
